    • Helford Passage in Cornwall is my favourite place to go rockpooling and has a rich abundance of sea life. Offshore there are beds of maerl, a rare seaweed. There are beds of eelgrass, the only British flowering plant that grows in the sea, which provides shelter for sea hares and sea lemons. Plus, there are 80 species of fish in the river. The mudflats support invertebrates such as the peacock worm, Sabella pavonina. See http://www.helfordmarineconservation.co.uk/ for details of events.
    • Broadcaster Bill Oddie says Kimmeridge in Dorset is the UK's best rockpooling site. The bay has a double-low tide, which will give you more than three hours to explore the shore. Smooth rock ledges reach far out into the bay, allowing easy viewing of marine life. The clear, shallow water is an ideal habitat for a multitude of rockpool creatures from anemones to sea slugs, as well as nurseries for juvenile fish.
    • Wembury in South Devon is famed for its fantastic rockpooling. You can find at least eight types of crab, as well as spiny starfish, squat lobsters, and fish such as blennies, gobies and rockling. Wembury Marine Centre runs "rockpool rambles", see https://www.wemburymarinecentre.org/visit-us Dunseverick Harbour (near Portrush, Co Antrim, Northern Ireland) has the deepest natural pools in Northern Ireland, with an extraordinary range of marine wildlife, including the sea hare, china limpet and needle whelk. Rathlin Island nearby is home to sponges found nowhere else in the world.
    • Killiedraught Bay, within the St Abbs and Eyemouth Voluntary Marine Reserve in Berwickshire, is one of the finest rockpooling sites in Scotland. You could find animals such as the breadcrumb sponge, bootlace worm and butterfish. The cliffs at St Abbs Head host 50,000 seabirds in spring and summer, such as guillemots, razorbills, kittiwakes and shags.

Apple / Pear / Rhubarb Crumble

  • 300g plain flour
  • 200g unrefined brown sugar
  • 200g unsalted butter, cubed at room temperature
  • sieved pinch of salt
  • Knob of butter for greasing
  • 500g apples or pears or rhubarb
  • 50g unrefined brown sugar
  • 1 tbsp plain flour
  • 1 pinch of ground cinnamon
  1. Preheat the oven to 180C/350F/Gas 4.
  2. Boil the rhubarb with sugar for 5 mins - lots of juice comes out
  3. Place the flour and sugar in a large bowl and mix well.
  4. Taking a few cubes of butter at a time rub into the flour mixture.
  5. Keep rubbing until the mixture resembles breadcrumbs.
  6. Place the fruit in a large bowl and sprinkle over the sugar, flour and cinnamon.
  7. Stir well being careful not to break up the fruit.
  8. Butter a 24cm ovenproof dish.
  9. Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top.
  10. Bake in the oven for 30+ minutes until the crumble is browned and the fruit mixture bubbling.
  11. Serve with thick cream or custard.

Mince Pies

for 12 mince pies:

  • pastry
    • 240g plain flour
    • 60g Trex or other veg fat
    • 60g butter (cold)
    • juice of 1 orange
    • 1 tsp orange flower water
    • pinch salt
  • Mincemeat: 200g
    • 1/4 tsp ground cloves
    • zest 1 orange
    • 1/4 tsp orange flower water
    • port
    • cranberries (as much as desired)
    • egg (for glaze)

(1) Make sure butter & Trex are COLD.

(2) take zest off orange and mix into mincemeat together with spices & port & cranberries.

(3) Squeeze OJ, add salt & orange flower water & put in fridge.

(4) Cut butter into small cubes, and add with teaspoon sized dollops of Trex to flour in bowl. Rub fat lightly into flour with hands until mixture resembles fine breadcrumbs.

(5) Put in freezer for 20 mins.

(6) Sprinkle OJ evenly over mixture while stirring it in with a round-bladed knife until mixture begins to stick together in large lumps.

(7) Put lump of dough in cling film or plastic bag & put in fridge for 20 mins.

(8) Put on oven at 180 C (fan oven) / 220 C (normal) / gas mark 7.

(9) Roll out lump, cut discs & put bases in tray, leaving 1/4 of pastry for tops.

(10) Put teaspoon of filling into each pie, not so much that it reaches edge.

(11) Roll out remainder of pastry, cut tops and place on mincemeat.

(12) Stir up egg with a little water and brush on pie tops for a glazed finish.

(13) Bake for 12 - 15 mins

(14) To serve, sprinkle icing sugar on top with a sieve.

Pancakes

  • 250g flour
  • 500ml milk
  • 1 large egg
  • pinch of salt
  • butter for frying pan
  1. Mix up the mixture, being careful to get rid of the lumps
  2. If using rice milk instead, add an extra egg
  3. Makes 8 pancakes

Dropscones

For 6 people:

  • 350g self-raising flour
  • 2 tsp baking powder
  • 80g caster sugar
  • 400ml milk
  • 2 eggs
  1. Mix up eggs and a little milk with the dry ingredients, adding only enough milk to make it smooth so that the lumps get mixed in
  2. Add the rest of the milk little by little until thick

Crumpets

  • 400ml milk
  • 1 tablespoon dried yeast
  • 1 teaspoon caster sugar
  • 300g flour
  • 1/2 teaspoon bicarbonate soda
  1. Warm milk, dissolve yeast and sugar, add 100ml water
  2. Leave 15 mins to ferment or til frothy
  3. Sift flour, bicarb soda, salt, make a well in the middle and pour in liquid
  4. whisk from centre outwards until consistency of cream, add water if needed
  5. leave for 45 mins
  6. arrange rings in pan and fry on lower heat, the more batter used so as not to burn

Toad-in-the-Hole

  • 2 eggs
  • 125g plain flour
  • 1/4 pint (150ml) milk
  • 1/4 pint (150ml) water
  • salt
  • pepper
  • 6 high quality herby bangers
  • 2 tbsp trex (veg fat)

(1) fry bangers on low heat - do not prick skins! Allow to cool.

(2) sieve flour into large bowl and add salt, pepper & eggs.

(3) mix in until egg is absorbed

(4) add milk & water in splashes stirring in each splash until the flour is no longer powdery, and stir mix thoroughly so that lumps are all broken down.

(5) gradually stir in rest of milk & water

(6) allow to rest for 30 mins

(7) put trex into deep-sided baking tin and place in oven at 200C (fan oven) until it smokes

(8) quickly take it out of oven and pour in the batter, and space bangers evenly.

(9) put back in oven for 30 mins or until batter is puffed u & golden brown.

(10) Serve with gravy and veg

Mulled Wine

cinnamon cloves cardamon coriander fennel nutmeg pimento blueberry lemon orange

Dover Sole

sauce: onion garlic red pepper 1/4 teaspoon thyme

Fry slowly for 15 mins.

Add diced courgette

fry for further 10 mins

add chopped toms

fry for further 5 mins.

Bake fish for 5 - 10 mins in oven at 235C

Granny's Lemonade

1kg granulated sugar 3 lemons 30g tartaric acid 700ml boiling water

Slice lemons into a bowl.

Add sugar and tartaric acid.

Pour over the boiling water, stir, cover and leave overnight.

Squeeze and remove lemons.

Dilute to taste.

Tiramisu

Sponge fingers

Mascarpone 250g

Ricotta 125g

Icing sugar 100g

Egg x3, seperated into yolk / whites

Vanilla essence

Coffee (strong)

Almond liquer / amaretto 20ml

Cocoa powder

(1) Make coffee strong and allow to cool

(2) Quickly dunk the biscuits in the coffee without allowing them to get so wet that they break up, and lay them on the bottom of the form

(3) Mix yolks, amaretto and icing sugar into a cream

(4) Mix in the mascarpone to the egg/sugar mix

(5) Beat the egg whites until really stiff

(6) Fold the stiff egg whites into the cream mix

(7) Layer the mixture onto the biscuit base in the form, creating more layers of biscuits, then mixture, then biscuits, finishing with a layer of mixture on top

(8) Cool in the refrigerator for at least 2 to 4 hours.

(9) Serve with a dusting of cocoa.

    • Also, a retired American named 'Ashcroft' left on a liner to Montreal in 1959. No further details.

sorry about the delay in responding, will spare you the details.

anyhoo, the very little i know is as follows.

Grandad worked at the local bank in skelmersdale, lancs (i will try to find out which one and in what capacity) the house that they all lived in was tied. He disappeared vanished whatever when my dad was 13, which makes your date right. nobody is any the wiser, of that i am sure.

because the house was tied the bank kindly ejected the family; grandma, auntie joan (who was working as a nurse), dad, uncle john and auntie phil. uncle eddie was already in the army i think.

they moved to redcar to run a b&b. by all accounts the locals there knew that a fatherless family were coming and treated them very kindly.

i am not surprised its kept quiet, it must have been dreadful for everyone.

i have never heard anyone speculate about what might have happened, nor do i know what sort of father he was.

i hope you are able to find out more

what sort of money do you have to pay for what items?

please keep me informed, especially if i can do something.

i'm coming up to anne and graham's house on wednesday 29th til friday 31st and am bringing my daughter hannah who is 14 and 11/12ths going on 25 if you follow.

just another snippet on grandad

mum know knows i'm digging and would you adam and eve it, suggested talking to your mum. great.

i told her to not say anything, and obviously she doesn't know of your enquiry.

he was manager of glyns bank in skelmersdale, came from reasonably well (we think) off farming stock in lancashire. liked his bridge games and would name drop the bishop of liverpool.

talking of bishops grandma ashcroft was a McCartie from cork, and we have one of our cousins over there who is now a bishop. i think there is a bit of bad feeling to them (or was) possibly to do with auntie joan, anne's mum. mum seems to think she was farmed out to one of grandma's sisters who was a matron or senior nurse in coventry and a complete bitch.

this of course is hearsay, but maybe in time we will know more

  • Barbara (Eddie's wife) comments to Claire on phone:
    • Eddie was 16 or 17 and in the Army, although he lied about his age by 6 months to get in.
    • Thomas Ashcroft disappeared before the war and the bank threw the family out of their house.
    • A secretary at the bank also went missing within a couple of months.
    • They probably emigrated to America together by ocean liner from Liverpool.
